Chilli Con Shakshuka

Ingredients

  • 2 tablespoon Vegetable oil
  • 500g 5% Fat Mince Meat
  • 4 cloves Garlic, finely chopped
  • 1 pepper Red pepper, sliced
  • 400g Chopped tomatoes
  • 2 teaspoon Paprika
  • 2 teaspoon Cumin
  • 1 teaspoon Chilli powder
  • 1 teaspoon Brown sugar
  • 4 Large eggs
  • 1 handful Feta, crumbled
  • 1 Avocado, sliced

Instructions

  1. Start by heating your oil in a large, non-stick pan over a medium-high heat and add your mince. Cook for 10 mins until browned and starting to crisp before removing from the pan and setting aside on a plate.
  2. Reduce the heat of your pan to medium and add your garlic and onion. Fry for a few mins until the onions are translucent before adding red pepper and cooking for a further 5 mins until softened.
  3. Add your chopped tomatoes, spices and sugar with a large pinch of salt and pepper, add your mince back in and simmer for 5-10 mins.
  4. Create 4 wells in your sauce mixture and crack an egg into each.
  5. Cook the eggs for 5-10 mins until the whites are set (you may want to cover with a lid to speed up). Serve scattered with feta and avo for the perfect start to a lazy Saturday morning.

Avocado Egg Boats

  • 3 avocados
  • 6 eggs, small
  • 1 handful spinach, finely chopped
  • 1 tagine paste
  • 1 tsp chilli flakes
  • 1 tsp pine nuts, crushed
  • 1 sprinkle sea salt

Instructions

  1. Pre-heat the oven to 440°F/220°C.
  2. Cut the avocados in half and scoop out a bit of the flesh from the centre, to create room for the egg.
  3. Add a thin layer of tagine paste in the hole then crack the egg into the hole. Sprinkle with the spinach, chilli flakes, pine nuts and salt.
  4. Add a pinch of salt and let this bake until the egg whites are cooked through. This will take about 5 mins.
  5. Once the egg whites are cooked through remove from the oven and serve.

  • 1 tin butterbeans
  • 2 large handfuls basil, roughly chopped

Instructions

  1. Drizzle a little olive oil in a large saucepan. Add the diced onion, celery, carrot and leek. Sauté for 5 minutes.
  2. Add the garlic and cook for 1 minute.
  3. Add the tomato purée and balsamic vinegar and cook for 1 minute.
  4. Add the chopped tinned tomatoes, cherry tomatoes, vegetable stock, bay leaf and thyme. Season well and stir to combine.
  5. Bring to the boil then reduce to a simmer for 20 minutes.
  6. After 20 minutes, remove the bay leaf and sprig of thyme. Add the cannellini and butter beans, stir to combine and simmer for a further 5 minutes.
  7. Season to taste. Add chopped basil and stir.

  2. Add garlic, herbs mushrooms and bay leaves, then cook for 2 more minutes.
  3. Heat a new large frying pan until it’s really hot, then crumble your mince in and cook until all the meat is brown.
  4. Add tomatoes, tomato purée, wine, vinegar and sugar, then season generously.
  5. Let the sauce simmer for 1 hour, until it’s thick and the meat is tender.
  6. Serve with spaghetti and sprinkle with parmesan and black pepper.
