Thai Chicken Curry Recipe

Ingredients:
- 250g Rice Noodles
- 600g Chicken thighs
- 1 tbsp Turmeric
- 5 tablespoons Thai red curry paste
- 4 tbsp Oil
- 6 cloves Garlic
- 1 cube Ginger
- 1 Coconut Milk
- 2 tins Honey
- 1 Lemon
- 0 cup Thai basil
- 2 Onions
- 1 tbsp Fish Sauce
- -1 Broccoli
Instructions:
To prepare this Thai Chicken Curry, first season the chicken with 2 tablespoons of Red Thai curry paste and mix well. Next, warm some oil in another pan over medium heat and cook the chicken until it is brown on both sides, about 5 minutes. Take the chicken out of the pan and place it aside. In the same pan, if necessary, add more oil, then, sauté the chopped onions, ginger, garlic, and the rest of the curry paste for 2 minutes or until fragrant. Then, pour the coconut milk, ¼ cup of water, honey, lemon juice and zest, fish sauce and the brown chicken into the pan. Allow it to simmer for 15 minutes on medium to high heat before putting the broccoli in. Lastly, let the broccoli to cook for another 10-15 minutes or until the chicken is done. Best served with rice noodles or rice and accompanied with Thai basil.

BBQ Prawn and Chorizo Skillet Recipe

- Ingredients:
- 75ml Olive Oil
- 5 cloves Garlic
- 135g Sweet Peppers
- 1 Red Chilli
- 0 Chorizo ring
- 1 Mixed Peppers
- 1 tsp Smoked paprika
- 150g King Prawns
- 1 Handful Parsley
- 1 Bread
- 3 wedges Lemon

Here is what you need to prepare for a tasty and fast BBQ skillet. Follow these easy steps:
Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes - The first step in grilling is to prepare your BBQ coals for grilling for not less than half an hour. Or, cook on a hob on medium/high if you prefer.
- Step 2: Pour a little amount of oil into a skillet pan and heat it. Next, add padron peppers and sea salt, and char all sides. Next, you should stir in the garlic for about a minute.
- Step 3: Chilli, chorizo and mixed peppers. Stir for 1 minute then add the smoked paprika and prawns. Stir until heated through.
- Step 4: Garnish with parsley, add the juice from the lemon wedges and best served with bread to make it a perfect BBQ sharer!

Crispy Chickpea Greek Pittas Recipe

- Ingredients:
- 1 tin Chickpeas
- 1 tsp Paprika
- 1 tsp Cumin
- 4 Pittas
- 2 Gem lettuce, shredded
- 100g Cherry tomatoes
- ½ Cucumber, diced
- 1 A red onion, cut into thin slices
- 40g Olives, halved
- 100g Feta, diced

Cook Time: 5 minutes
Total Time: 15 minutes - Step 1: Place cooking oil in a frying pan and heat it; cook the chickpeas after they have been drained, rinsed and dried. Stir fry until it is crispy brown in color.
- Step 2: Add in the paprika, cumin and other ingredients to the pan and then turn off the heat.
- Step 3: Place the salad ingredients in a big bowl and dress with olive oil and lemon juice.
- The fourth step is to toast the pittas, then cut them in half and stuff them with the salad and the crunchy chickpeas.

Asparagus and Feta Pastry Boxes Recipe

Recipe for Asparagus and Feta Pastry Boxes
Ingredients:
- 400g puff pastry
- 2 tbsp milk
- 24 asparagus spears
- 1 lemon
- 3 tablespoons olive oil
- 150g feta, crumbled
- 1 handful dill, fresh

Prep Time: 15 minutes
Cook Time: 25 minutes
Total Time: 40 minutes - Firstly, heat the oven to 200°C/180°C fan/Gas 6. Unroll the puff pastry and divide it into 6 rectangles of about 7 x 12 cm. Put into a non-stick baking tray and draw a 1cm line around them. Milk bath and bake for 25 minutes or until golden brown.
- Step 2: Take out from the oven and using a biscuit cutter, cut out the middle part of the pastry to create pastry boxes. At the same time, blanch asparagus in boiling water for 5 minutes. Drain and toss with lemon juice and zest, olive oil, salt and pepper.
- Step 3: Place asparagus in pastry boxes and sprinkle crumbled feta and fresh dill on top of it. Serve and enjoy!
